To Whom it May Concern:

I have had the pleasure of working with Spiros for the past four years. My
experience with Spiros has been a unique one. When we first hired Spiros to
do our bi-monthly audits, we were operating one restaurant in East Hampton
and had done our own liquor inventory for seven years since we opened. Four
years after hiring Spiros and Bevinco we own three restaurants in East
Hampton and will be opening another one in the spring of 2005.

A large part of the success we have had is a direct result of Bevinco and
tighter liquor controls. We have watched our liquor revenue increase at all
three establishments as a direct result of Bevinco. The reports that
Bevinco generates are extremely thorough and easy to understand as well.

When our wine percentages were higher than what we wanted them to be at one
of our establishments, we were able to pinpoint that the wait staff were
over pouring the wines by a glass. A minor correction generated a 25%
improvement in our wine percentage over a one-month period. Not only did
Spiros go over the reports in detail with me, he came in and talked to our
staff about liquor control and how they should be pouring drinks and wine by
the glass. Needless to say, they responded and we have not had a problem
since that session.

I firmly believe in Spiros and Bevinco and highly recommend him and his
company to anyone who is looking to run a successful and profitable
restaurant business. We would not be where we are today without Bevinco.
